Sourdough pizza dough issueI think this is a very good pizza dough calculator but of glitch: If sourdough hydration is 100% the amount of sourdough is too high. If the sourdough hydration is reduced then the pizza hydration becomes too high. Ex: pizza dough hydration = 61%, For 20% sourdough, sourdough hydration is set to 100%, the total amount of sourdough is 542g which is too high. The amount of flour used is 1084g.
